Back to Matilda. One of the first recipe she composed together with our Dulce de Leche was Semifreddo with Maltesers. An easy recipe that requires no heat up or risk becoming scrambled eggs. No need to cool and then refrigerated overnight. Additionally capable semifreddo becoming absolutely delicious on its own without any ice cream machine. However, one has still got to wait a few hours before you can start enjoying it but it is well the next part of the enjoyment, att få sukta lite efter något.

Semifreddo with Malteser and Dulce de Leche
- 200 g dark chocolate
- 4 eggs, separated
- 2 cup granulated sugar
- 2 cup heavy cream
- 2 dl creme Fraiche
- 2 dl Dulce de Leche Classic
- 1 1/2 dl malteserskulor
Finely chop the chocolate and melt it in a water bath
Whisk the egg whites until stiff peaks with 1 dl av sockret.
Vispa äggulorna pösigt tillsammans med resterande socker.
Vispa grädden.
Vänd samman den smälta chokladen och creme fraichen.
Rör samman äggulesmeten med den vispade grädden och choklad creme fraichen.
Vänd försiktigt ner äggvitesmeten.
Dress the inside of a mold with plastic wrap and pour a little of semifreddosmeten. Drizzle a bit of dulce de Lechen down in semifreddon and pour on some malteserkulor. Täck med resterande semifreddo smet och häll på resten av dulce de lechen och malteserkulorna.
Place in the freezer at least 5-7 timmar.

This is a recipe created by Matilda, who is running the beautiful blog Matildas Mat. It’s a simple way of making a type of ice cream but without heating the batter, risking the eggs to get cooked. No need to leave the batter to cool nor to use an ice cream machine.
Semifreddo with Malteser and Dulce de Leche
- 200g dark chocolate
- 4 eggs, separated
- 200 ml granulated sugar
- 200 ml whipping cream
- 200 ml sour cream
- 200 ml Dulce de Leche Classic
- 150 ml Maltesers candy
Chop the chocolate and place in a heat proof bowl. Bring some water to simmer in a saucepan. Keep the temperature low. Place the bowl in the saucepan make sure that water can’t enter in the bowl. Stir till chocolate is melted. Remove the bowl from the heat.
Beat egg whites and 100 ml of the sugar until soft peaks form.
Beat egg yolks and remaining sugar until fluffy.
Whip the cream.
Fold together melted chocolate and sour cream.
Whisk together egg yolks, whipped cream and chocolate sour cream.
Gently fold in egg white.
Dress the inside of a mold with plastic wrap and pour a little of the semifreddo batter. Drizzle some of the Dulce de Leche into the semifreddo and add some Malteser candy. Cover with remaining semifreddo batter and drizzle the remaining dulce de lechen and malteser candy on top.
Freeze for at least 5-7 hours.
