Sweet and simple – Plum Compote with dulce de leche and sea salt

Autumn is getting more and more reminded although summer does not really want to let go, at least down here in Lund. Cold and foggy mornings mixed with warm afternoon with clear blue sky. A lovely time when the air is high and healthy, nature starts to change to a lovely mix of yellow and red. After kindergarten, it becomes all too often a trip to the playground in the city park here in Lund. There you go right halfway home and filled with excited children running of that last summer. Nöjda och påfyllda av härlig friskluft landar vi hemma och njuter av att nu märks det igen om man tänder ett stearinljus vi middagsbordet.

One of our goa blog friends (or actually a few of them) has been nominated for Matbloggspriset category “Best Photo”. We are of course very happy for her and would keep my fingers crossed for her. She is well worth, a true inspiration. A while ago she made a lovely autumn recipe for plum, ackompanjerade av Mascarponemousee, Dulce de leche and sea salt. Does not sound at all dummt, or? Plommonkompott med Dulce de leche och flingsalt

PLOMMONKOMPOTT
  • 350 g plommon
  • 3 tablespoons water
  • as. 1,5 cup sugar or honey
  • 1 teaspoon vanilla
  • 1 tsk cinnamon

Wash plums and remove the core. Put them in a saucepan along with the water, sugar, vanilla sugar and cinnamon. Let it boil and when the plums are soft and you're done. Mixa till en slät smet.

Låt det svalna.

MASCARPONEMOUSSE
  • 1 dl mascarpone
  • 2 cup heavy cream
  • 0,5-1 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 ts citronsaft

Beat the whipping cream with an electric mixer. Rör ner mascarpone, Icing, vanilla and lemon juice. Men rör inte för mycket för då kan moussen bli en aning rinnig.

DINING

  • 0,5 dl dulce de leche
  • some pinches sea salt

Take out four glasses and pour plum compote and marscarponemousse. Klicka dit lite kola och strö över havssalt.
